Gluten Free Oatmeal Chocolate Chip Cookies

These are so delicious, they'll be calling you for more and more and more.
  

Ingredients: (Can be doubled to make more)
1 3/4 cup My All Purpose GF Flour Mix (see Flour Mixes)
1/8 cup Millet Flour
1 cup GF Rolled Oats
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon fine sea salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 cup + 1 tsp Melted Butter
3/4 cups light brown sugar
1/2 tablespoon vanilla
1 egg
1 cup semi-sweet chocolate chips

Steps:
1) Preheat oven to 350 F
2) Spoon balls of dough onto Parchment Paper
3) Bake for about 15 minutes until slightly golden and chewy. (Note: Longer baking time (15 minutes) creates a harder cookie, closer to packaged oatmeal cookies.
4) Cool the baking sheets on a wire rack for 3-4 minutes; than remove the cookies onto cooling rack.
5) Store in air tight container.

If cookies get hard put in zip lock plastic bag with sliced apples.

Gluten Free and Affordable?


When finding out you need to avoid gluten, you can definitely go broke too. Finding out the prices for "gluten free" stuff made my mouth drop! Especially since I'm not someone who makes a lot of money in the first place. So, I have searched online and found there's a lot of things you can make yourself. And even though it is a bit time consuming, once you get the hang of it, it becomes like second nature.

BREADS
If you have to buy, try Udi's. That's the best tasting one. The others taste so blah and cardboard-like.
If you like to make it yourself, get used to flat breads. I will add some recipes I have tried and liked. Or buy a bread maker. You just put in the mixed GF flour mix and viola! You have GF bread for less than 1/2 the price you'd buy it.


BAKING
If you love sweets as much as me, you will love my flour blend. I use it in almost every "regular" recipe that calls for wheat flour. It is very versatile and tastes great. If you have to buy though, try Arrowhead Mills brand for boxed make it yourself mixes. They taste great!

Mc Donald's French Fries ARE NOT GLUTEN FREE!!!!

So, I go with my son to McDonalds to get him a Happy Meal and think to myself, heck, I feel like some fries! There's no batter on them and it's just fried potatoes right? So I get some. A Large! And gorge on them ...every last bite. Jeeeez....did I pay for it the next day.

I had tingling and prickles for 2 days and hot sensations in my legs and feet. I drank so much water to get it out of my system (that helps get it out faster by the way). Otherwise I think it would have lasted a week.

So here's what I found out (from their website) what are the ingredients in McDonald's french fries:

Allergens: WHEAT AND MILK
Potatoes, vegetable oil (canola oil, hydrogenated soybean oil, natural beef flavor [wheat and milk derivatives]*, citric acid [preservative]), dextrose, sodium acid pyrophosphate (maintain color), salt. Prepared in vegetable oil (Canola oil, corn oil, soybean oil, hydrogenated soybean oil with TBHQ and citric acid added to preserve freshness). Dimethylpolysiloxane added as an antifoaming agent.

Never would have figured that out. Beef flavoring??? In fries????

Welcome

Welcome to my blog and my journey through this new way of life I have acquired. It took me a year and a half to find out I had Gluten Sensitivity. It is different from Celiac disease, as its symptoms are different and not as quick. Other people may have different reactions, but mine comes out as Neuropathy in which my body's response to gluten makes me have tingling in various parts of my body with hot and cold sensations accompanied by fatigue and depression.

I have learned a lot and still learning more each day. My once favorite food (which was bread) has been replaced with various gluten free alternatives and my world has been changed such that I need to know everything that I eat (even the hidden elements that are in the food which nobody thinks about).

So hopefully, with this blog, I will share my journey and things that I learn, so that others can use it if they stumble upon the same brick wall as me.
